Cheesecake with Raspberries








This cheese cake is so easy and fast because you don’t need to bake it, which is perfect for summer days.  Just mix up and chill for at least 3 hours.  I like to do the night before. If you didn’t want to wait, you could use the mixture and spoon in to parfait cups layered with graham cracker mixture and fresh raspberries.



First make a graham cracker pie crust  Take graham crackers. (One package to one an a half)and crush them or put them in the blender.  Add melted butter until soft and press in to a pie dish. set aside.


1 (8 oz.) package cream cheese, softened
1 (14 oz.) can Eagle® brand sweetened condensed milk (not evaporated milk)
mix together in bowl with an electric mixer.
add:
1/3 cup lime juice I use fresh, it is about the juice of one large lime.  or you could use juice from concentrate.
1 teaspoon vanilla extract
pour into pie dish on top of graham crackers.  Chill at least 3 hours. 
Top with:
2 cups fresh raspberries, washed and drained

Substitute any other fresh fruit. 
grate lime or lemon zest on edges. 

garnish with fresh cream if desired.

BBQ Venison

Ingredients:

1 venison roast, about 3 to 4 pounds, leg or rump
1 cup wine or beer
3 cloves garlic, minced
salt and pepper
2 onions, sliced
3 bay leaves
2 cups Barbecue Sauce, your favorite


Preparation:
Trim excess fat from venison. In large bowl combine beer, garlic, salt, pepper, onions and bay leaves; add venison (the marinade should cover meat). Marinate in refrigerator for 12 hours, turning occasionally. Remove venison and onions from marinade and place in slow cooker/Crock Pot. Pour 1 cup Barbecue Sauce over top. Cover and cook on LOW for 10 - 12 hours. Serve with remaining Barbecue Sauce.
Serves 6.

Tom Kha Kai


1 1/2 inch piece of galangal, peeled and sliced
small bunch fresh cilantro with roots
4 kaffir lime leaves (makrut), torn
1 stem lemongrass, sliced lengthways
3 tablespoons fish sauce
juice of 2 small limes
1 3/4 cups coconut milk
3 chicken breast, cut into thin strips
1 red long or green bird chilies -  seeded and sliced
Put the galangal, cilantro roots, lime leaves, lemongrass and 4 cups of water in a saucepan and bring to the boil. Add the fish sauce and lime juice, decrease the heat, and simmer for 10 minutes. Remove the cilantro roots. Add the coconut milk, bring back to a boil and boil for a couple of minutes. Add
the chicken pieces and cook for just a minute or so, until the chicken is soft and milky looking and cooked through. Throw in the chile and mix well. Serve in bowls with the cilantro leaves roughly chopped and scattered over the top.

Saturday - Menu Planning and Shopping


Your week starts on Saturday because that is your day that you prepare for the next week.  Tomorrow is Sunday.  You want to have a nice Sunday dinner on the table with the freshest of ingredients.
This is a great day to do your planning and shopping for the next week.  Tonight's dinner can be a joint effort between the two of you.  A cook out, a dinner party, or just an easy deli selection from your grocery.  It all depends on when you do the shopping.
If you have your list already made out, then it will be an easy task to run to the grocery first thing Saturday morning. The traffic is almost nil and the food is fully stocked and ready for the weekend.   Another added benefit- your family probably won't even know you left, they will all be snoring away, or watching their favorite Saturday cartoon.
Ideas for Menu
Saturday- This week we are picking up a Rotisserie chicken at the deli. Or you can bake my BBQ Chicken.  It will be a great meal with baked potatoes.  Add some fresh veggie, like stir-fry  zucchini or broccoli salad and you have an amazing meal.
Sunday- A great time to go out to eat after church.  Then in the evening you can dowraps with the left over sliced rotisserie chicken.
Monday- Roast beef in the crock pot
Tuesday- Fish - Talapia   Japanese Salmon    Italian Fish
Wednesday- Italian  Red Pepper Sauce    Italian Red Sauce

New Year's Eve Strudel

apple strudel

New years eve special
dough:

1 1/2 cup flour add more if needed to make dough pliable and not too sticky
1 egg
1/2 t. salt
1/2 t. yeast
3 T. sugar
1/3 cup water lukewarm
5 t. oil
put in bread maker on dough setting
roll out thin.
place in buttered casserole dish and wrap over filling.  can braid the top for a creative effect.
bake till browned and then bake till done with foil on top.

filling:
1/2 cup bread crumbs
1/2 cup flour
3 T. butter melted
2/3 cup sugar
2 t. lemon juice
3/4 cup cranberries, optional
2 1/2 lbs. about 6-8  apples  chopped tiny
1 T. Rum

after baking ice with cream cheese icing with added cinnamon.

Mom's German Chocolate cake

Mom's German choc. cake

preheat if you have electric oven to 350

2 c. sugar
2 c. flour
1/4t. salt
3 T. Cocoa powder
1 cup coconut milk   (or if you want 1 cup coconut and 1 c. water)
3/4 c. oil
1 t. soda
1/2 c. buttermilk (regular milk plus vinegar 1/2 t.)
1 t. vanilla
1 T. rum or 1 t. rum flavoring
2 eggs

beat hard with electric beaters till fluffy

oil and flour pans first then pour in batter

I use 9x 13 pan but you could do two round cake pans.  

Bake for 35 min.  check to see if cake is pulling away from sides
if it is then it is ready. you can also use the toothpick method

Frosting
Make while cake is cooking and then pour over hot cake

1 cup evaporated milk
1 cup sugar
3 egg yolks
1/2 c. butter
1 t. vanilla
1 t. rum flavoring or 1 T. rum

Cook on low heat till thick.  if the eggs are room temp they will be ok, but if they separate in the frosting you can just run in the blender for a min.  makes it really smooth
as it cools it will thicken as well.

pour on hot cake and top with pecans and coconut all over.  I also put on chocolate chips.  you could do this first then the nuts, last the coconut.

avacado wrap


White beans mashed with ripe avocado and blended with sharp Cheddar and onion makes an incredibly rich, flavorful filling for this wrap. The tangy, spicy slaw adds crunch. A pinch (or more) of ground chipotle pepper and an extra dash of cider vinegar can be used in place of the canned chipotles in adobo sauce.


Creamy Avocado & White Bean Wrap Recipe


  • INGREDIENTS:

  • 2 tablespoons cider vinegar
  • 1 tablespoon canola oil
  • 2 teaspoons finely chopped canned chipotle chile in adobo sauce, (see Note)
  • 1/4 teaspoon salt
  • 2 cups shredded red cabbage
  • 1 medium carrot, shredded
  • 1/4 cup chopped fresh cilantro
  • 1 15-ounce can white beans, rinsed
  • 1 ripe avocado
  • 1/2 cup shredded sharp Cheddar cheese
  • 2 tablespoons minced red onion
  • 4 8- to 10-inch whole-wheat wraps, or tortillas




PREPARATION:

  1. Whisk vinegar, oil, chipotle chile and salt in a medium bowl. Add cabbage, carrot and cilantro; toss to combine.
  2. Mash beans and avocado in another medium bowl with a potato masher or fork. Stir in cheese and onion.
  3. To assemble the wraps, spread about 1/2 cup of the bean-avocado mixture onto a wrap (or tortilla) and top with about 2/3 cup of the cabbage-carrot slaw. Roll up. Repeat with remaining ingredients. Cut the wraps in half to serve, if desired.

NOTES:

  • Ingredient Note: Chipotle chiles in adobo sauce are smoked jalapeños packed in a flavorful sauce. Look for the small cans with the Mexican foods in large supermarkets. Once opened, they'll keep at least 2 weeks in the refrigerator or 6 months in the freezer.

Mediterranean Tuna Antipasto Salad

1 15- to 19-ounce can beans, such as chickpeas, black-eyed peas or kidney beans, rinsed



  • 2 5- to 6-ounce cans water-packed chunk light tuna, drained and flaked (see Note)


  • 1 large red bell pepper, finely diced


  • 1/2 cup finely chopped red onion


  • 1/2 cup chopped fresh parsley, divided

      Black Forest Torte

      I went to the huge, newly remodeled central world in Bangkok last spring. So nice to be able to have said that I did go there before it was destroyed by fire. Actually I went three times. Such a massive wonderland of different boutiques and restaurants! I am sure they will begin building again to restore this amazing place very soon. How could Bangkok do without it?

      The Centara Hotel which is in connection with Central World had a little cafe at the sky train entrance. They sold delightful sandwiches and pastries and of course the full range of espresso coffee drinks.

      The Black Forest cake was superb. I found myself going back for another the next day, but instead, because of my waistline, only walked slowly by and peered longingly in the glass counter where it was so beautifully displayed.

      This is not a low fat treat!

      I always take a good look at the food I eat and try to figure out a recipe of how to repeat or make a similar. So here it is:

      Black Forest Torte

      1st layer
      nice soft chocolate cake that is not too sweet.
      Soaked in Brandy syrup

      2nd layer
      chocolate mousse. The way I make this is adding powdered sugar, vanilla and almond flavorings plus cherry brandy if desired to whip cream. then add cocoa powder to taste. 1 or 2 heaping tablespoons.

      3rd layer
      Chocolate cake layer number two also soaked

      4th layer
      cherry pie filling to which cherry brandy was added

      5th layer
      cream I whip cream with vanilla and a pinch of salt plus a couple tablespoons of powdered sugar.

      the the last layer is cocoa sprinkled on top.
      decoration includes cherry and a piece of dark chocolate

      keep in fridge till ready to eat
      can be made in individual dishes or one large glass torte dish.

      meat patties



      Make humus according to directions except add fahita mix

      Then make meat patties
      Ground beef, egg, bread crumbs and spices, fahita mix
      fry with olive oil till browned.

      make wraps with humus, meat, avacado lettuce tomato and dressing.
      Dressing
      equal parts of mayo and yogurt or sour cream
      add salsa until salad dressing consistency. add cajun spice and garlic powder.

      potato salad

      I made the most amazing potato salad the other day, boil potatoes with garlic. drain. pick out the garlic for the dressing. place in blender with mayo and avacado, celery, cilantro and spices, garlic pwdr. cumin, and cajun spice plus ginger if desired.

      Blueberry muffins with crumb topping

      Muffins that work are hard to find. When I find a recipe I can count on, I use it over and over again just varying the ingredients to suit what I have. I found a recipe from Enlightened Cooking that I tried and it was so great, I find I can hardly improve on it. But here it is my variation with some crumb toppings added and that made it extra special.

      2 cups of flour I use 1 cup white or whole wheat and 1 cup barley flour
      Barley flour makes everything so fluffy.
      1 cup sugar I use brown natural sugar
      1 1/2 t. baking powder
      1 t. salt
      1/2 t. soda
      2 t. vanilla
      3/4 cup milk or yogurt
      1/4 cup oil or butter
      1 egg beaten
      2 cups fruit. in this case I used frozen blueberries
      1/3 cup nuts, I used almonds
      makes 12 muffins
      oven 400

      Combine dry ingredients, make a well in center, add wet ingredients that have been beaten together. Stir till just moist.
      Fold in fruit and nuts.

      Sprinkle with topping:
      1/2 cup nuts
      1/2 cup packed brown sugar
      1/4 cup flour
      2 T. butter
      mix in processor until crumbs stick together just a bit.

      Fill the muffin tins with muffin papers or oil and flour the tins. Fill each cup halfway with batter.
      spread on top of each muffin just before baking.
      push down a bit so as not to fall off when baking.

      If you wanted to make this a sweet bread it would make one loaf.

      crab alfredo


      You can use imitation crab for this recipe. See http://ask.yahoo.com/20030110.html for what imitation crab really is. Real crab meat would work great as well.

      1 pkg. of imitation crab meat. About 1- 2 cups.
      1/4 c. butter
      1 can mushroom soup
      1 can cream of chicken soup
      1 cup yogurt
      1/4 c. celery minced
      garlic powder to taste
      italian herb mix to taste
      pepper and garlic blend to taste
      Cajun spice to taste optional

      melt butter in pan and heat crab through, then add the soups, celery and yogurt and season. Heat till just hot but not boiling.
      pour over penne pasta and top with buttered bread crumbs or mozzarella cheese.
      Bake 20 min. or till crumbs are browned a bit or cheese is melted.

      Japanese Salmon with Siiyuu sauce

      Place salmon steaks, three or four, in a roaster which has been oiled liberally with olive oil.
      Make sauce and spread half over fish.  Bake 20 min.

      add remaining sauce and serve with green onions and corriander.

      Sauce:
      2 T. rice vinegar
      2 T. siiyuu sauce
      2 T natural sugar
      1 T. molasses
      2 T. soy sauce
      2 prunes
      1 T. cornstarch
      Place in blender till smooth

      boil till thickened a little
      add sesame seeds. about 1/4 cup

      divide half for dipping sauce

      the other half add one more t. rice vinegar and put all over fish

      New Year's Stuffed Chicken Roast

      8 Chicken breasts
      open and pound lightly careful not to make holes in flesh.  flatten so you can roll around the stuffing.
      pat chicken dry

      stuffing 1/2 cup bread crumbs half and half cornbread and whole wheat
      1 large can peaches  drained and squished
      herbs  thyme and provencial
      garlic several cloves
      butter  1/2 cup softened
      cajun spice, salt pepper to taste

      Mix peaches herbs and garlic with crumbs and add softened butter.

      stuff chicken breasts and tie with string, optional bacon.

      sprinke with cajun season salt and pepper

      place in roaster
      add 1/4 cup peach juice
      1 cup white wine
      cover with foil
      bake  350 degrees until golden 40 min.  basting often

      after baking, take out of roaster and place on platter.
      Make gravy from
      drippings in the roaster.  put directly on the fire add 1 1/2 cup broth (chicken broth) with 2 heaping T. of flour
      add to juices and stir till thickened.  Add extra wine if needed

      cranberry and white chocolate scones

      I had these first at a Christmas party and could not believe how moist and delicious they were.  Then today, I made these for breakfast.  They disappeared fast!  I think I found my scone recipe.  My other one was pretty sweet.  These are just right.  Perfect for a festive Christmas breakfast.



      Cranberry and White Chocolate Scones

      Makes 8 large scones or 16 small ones
      -----------------------------
      1. Preheat oven to 400 degrees F.
      2.  Blend together the flour, sugar, baking powder, salt, and butter.
      3. Add the half and half, beaten egg, cranberries, and the white chocolate, and stir until the dough holds together.
      4. Turn out onto a lightly floured board 
      5. Pat and form into a 1/2-inch thick round, then cut the round into 8 wedges (or 16)
      6. Oil a cookie sheet and gently transfer the wedges with a spatula.
      7. Bake 400 degrees F for 14 minutes

      Roasted Red Pepper Sauce

      We had a family reunion at the beach one summer.  We were in a hurry to get outside but we still needed to  feed several hungry kids plus 8 adults.  What to make?  Pasta!

      Roasted Red Pepper Sauce

      1 T. olive oil
      1/4 c. onions
      1 cl. garlic
      1 Cup sliced Roasted Red Peppers.  You can make your own and store them for future use.
      4 pecan halves
      1/4 c. chicken or veggie broth
      1 t. balsamic Vinegar
      salt, pepper
      red pepper flakes or powder to taste
      Add fresh basil after coking.

      Stir fry onions, garlic in oil.  mix in Roasted Red Peppers blend in processor.

      cook capellini Pasta or other pasta. in salted boiling water
      drain
      toss with sauce
      sprinkle basil and parmesan cheese if desired

      individual pizzas

      We took the pizza dough from Jamie Oliver:


      • 1kg strong white bread flour or Tipo ‘00’ flour
      or 800g strong white bread flour or Tipo ‘00’ flour, plus 200g finely ground semolina flour
      • 1 level tablespoon fine sea salt
      • 2 x 7g sachets of dried yeast
      • 1 tablespoon golden caster sugar
      • 4 tablespoons extra virgin olive oil
      • 650ml lukewarm water




      Sieve the flour/s and salt on to a clean work surface and make a well in the middle. In a jug, mix the yeast, sugar and olive oil into the water and leave for a few minutes, then pour into the well. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead until you have a smooth, springy dough.

      Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a damp cloth and place in a warm room for about an hour until the dough has doubled in size.

      Now remove the dough to a flour-dusted surface and knead it around a bit to push the air out with your hands – this is called knocking back the dough. You can either use it immediately, or keep it, wrapped in clingfilm, in the fridge (or freezer) until required. If using straight away, divide the dough up into as many little balls as you want to make pizzas – this amount of dough is enough to make about six to eight medium pizzas.

      Timing-wise, it’s a good idea to roll the pizzas out about 15 to 20 minutes before you want to cook them. Don’t roll them out and leave them hanging around for a few hours, though – if you are working in advance like this it’s better to leave your dough, covered with clingfilm, in the fridge. However, if you want to get them rolled out so there’s one less thing to do when your guests are round, simply roll the dough out into rough circles, about 0.5cm thick, and place them on slightly larger pieces of olive-oil-rubbed and flour-dusted tinfoil. You can then stack the pizzas, cover them with clingfilm, and pop them into the fridge.




      Then we added:

      Mozzarella cheese

      Parmesan cheese (fresh)

      Fresh Sweet Basil 

      Optional:

      Salami - Sliced
      Red Sweet Peppers - Sliced 
      Boiled Eggs - Sliced
       
      No Cook Tomato Sauce:

      6 large tomatoes Roma tomatoes that are ripe and clear skinned
      1 clove Garlic
      1 t. salt
      fresh ground black pepper
      1 T. olive oil
      1 T. balsamic Vinegar

      1 cup fresh basil chopped or combination of herbs oregano, thyme, basil etc...
      1 t. natural sugar to taste
      1/4 t. lime or lemon juice to taste
      add powdered Cayenne Pepper to taste


      Process in food processor, cover, place in fridge overnight or at least 4 hours.

      Pumpkin Cake

      When I need to feed a large crowd for the holidays, sometimes I will make this festive pumpkin cake.  Can be served with whipped cream.

      1 1/2 cups Sugar
      1 3/4 cups cake flour
      1/4 cup whole wheat flour
      1/4 t. salt
      1 t. baking powder
      1 t. baking soda
      1 t. cinnamon
      1/2 t. nutmeg
      1/4 t. cardamon or ginger

      mix dry ingredients together, set aside.

      Cream together:  (I use a food processor)

      2 eggs
      2 cups cooked, steamed or canned pumpkin
      1 8 oz. carton sour cream or yogurt
      1. vanilla

      Add to the dry ingredients.  If too stiff, add some evaporated milk until smooth.

      Mix well.

      Pour into 11x 13 inch cake dish.

      Sprinkle with nut mixture:

      1/2 cup almonds
      1/2 cup brown sugar
      1/8 cup butter

      Bake 350 oven for 35 to 40 min.
      Pour carmel sauce over the hot cake.

      Sauce:
      2/3 cup sugar
      1/2 cup butter
      2/3 evaporated milk
      boil 2 min. add 1 t. vanilla

      Fruit Tart Crumb Bars

      I thought I would post some delicious fruit bars Janie and I made last night.
      I got the original recipe (called Cranberry Crumb Bars)  from my friend Robin (thank you, Robin!) and then made a few changes.  I also thought of some substitutions that would be nice if you don't have or don't want to use cranberry sauce.


      Crust and Topping:

      1 cup white flour (cake flour makes a softer dough)
      1 cup whole wheat flour
      1 1/2 cups oats, I used whole grain
      1 cup sugar or less
      3/4 cup butter

      Mix crust ingredients together until crumbly, you may need to add a little more or less butter.
      reserve 1 1/2 cup of mixture for topping and press the rest into a 9x13 glass dish.
      Bake for 15 min.  350 F

      Meanwhile mix filling together.


      Filling:
      2 cups of canned cranberry sauce  or raspberry jam (low sugar variety)
      3/4 cup dried cranberries
      3/4 cup orange marmalade
      1/2 cup dried shredded coconut
      3/4 cup crushed almonds
      1/4 cup flour

      Spoon over hot crust and bake another 45 min. Cut while warm to insure low crumbling and let cool in pan till firm.  Bars should be 2 1/2 inches by 1 1/2 inches aprox.  Should make about 25 bars.
